Oodles of zoodles! We love using fresh zucchini to make a low-carb pasta dish. Best of all, the whole dish is prepared in the microwave – less mess and less stress!
1 1⁄2 cups milk
4 small zucchinis, spiralized into thick noodles
2 cups chopped broccoli
1 cup frozen peas
Grated Parmesan cheese, to taste
- In a Multipurpose Steamer combine mix with milk. Microwave, uncovered, on high for 4–5 min, or until thickened, whisking halfway through.
- Add zucchini noodles, broccoli and peas. Gently toss to mix.
- Cover and microwave on high 1–2 min, or until veggies are tender. Top with cheese, as desired.
