We love to keep things simple, always. Easily turn Alfredo sauce into a blushing pink rosé sauce with the addition of tomato paste.
Serve with 1 cup mixed greens and 2 tsp prepared Epicure salad dressing.
2 cups uncooked penne pasta
4 cups hot water
1 1⁄2 cups milk, your choice
1 can (5.5 oz/156 ml) tomato paste
340 g cooked shrimp, peeled and deveined (24 shrimp)
- Place pasta in Multipurpose Steamer. Stir in water. Cover; microwave on high until tender, 7–8 min.
- Meanwhile, combine sauce mix with milk in a large fry pan. Whisking constantly, bring to a boil over medium-high. Reduce heat, and simmer 3 min or until thickened.
- Whisk in tomato paste until evenly combined. Add shrimp and stir to combine. Simmer on low-medium heat until heated through, about 2–3 min.
- Drain pasta; return to steamer. Pour sauce into steamer and mix well.
For added flavour, add feta and broil in oven.
Go vegetarian and replace shrimp with canned black beans.
